Here is another alternative to using up peaches. I wanted to do something fairly easy and fast. I had puff pastry and had some almond paste. I thought this would be simple combination with the ingredients I had on hand. I've made peach cobbler, sorbet, jam, and now this tart, I'm running out of things to make and ideas.
6 peaches poached, peeled, de-seeded and cut in half
7 oz of almond paste
1/3 cup of amaretto
1/4 cup sugar
1 cup blanched almonds
1 tsp vanilla
pinch of salt
1 sheet of puff pastry
Preheat 400 degrees
In a small pot add amaretto and warm gently to burn off the alcohol. Add almonds to a food processor and pulse. Add amaretto, almond paste, sugar, vanilla, and puree until you have a smooth paste.
Take puff pastry and cut the puff pastry to fit a 9 inch tart pan. Carefully line the puff pastry around the tart pan then fill with the almond mixture. Take the halved peaches and place all around the tart. Place the tart in the oven and bake for about 40 minutes. Take out and let the tart cool. Sprinkle the tart with powdered sugar and serve.
