I just love the color of this purple cauliflower and I love to do a medleys of cauliflower especially when I have purple, green, yellow, and white. This time I just had white and purple and I decided to roast them with a little curry and serve with a spicy mint sauce. This couldn't be any easier. Not much to say or do on this post so I will be brief.
1 head of white cauliflower core removed and cut into bite size pieces
1 head of purple cauliflower core removed and cut into bite size pieces
4 tbsp of olive oil
1 tbsp of curry powder
Mint and Cilantro sauce
1 cup cilantro
1 cup mint
2 serranos with seeds
3 garlic cloves
1 1/2 cup olive oil
chopped chives to garnish
Preheat oven 400
For the white cauliflower place in a bowl and drizzle with half of the olive oil. Season with salt, pepper, and all of the curry powder. Toss to incorporate everything evenly. Spread evenly on a sheet pan lined with parchment or foil ( optional, I do this to make clean up easier ). Repeat the same process with the purple cauliflower except no curry powder. Place the cauliflower in the oven and roast for about 20 to 25 minutes.
For the cilantro sauce, Puree the serranos and garlic in a food processor for 10 seconds. Add all the herbs and puree for 10 seconds. Then start adding the oil to the mixture in a steady flow. Once all the oil has been added season with salt and set aside
To serve, simply spoon the sauce on a platter, arrange the cauliflower, and garnish with some choppe chives. Simple and easy vegetable dish.
