Here is one of the easiest and tastiest recipes for brussels sprouts I know.  Great for this time of year when all the brussels sprouts are plentiful.  I love brussels especially when they are prepared well.  This recipe really gives a lot of texture and flavors with very limited work.

3lb brussel sprouts

2 cups of grapeseed oil

Miso mayo

1/4 cup blonde miso

1/2 cup of mayo

sesame seeds

For Miso mayo,

Simply place miso and mayo in a bowl and whisk until combined completely.  Set aside until ready to use.

Place 2 cups of oil in a cast iron skillet for frying and turn on medium high.  Meanwhile wash, dry, and cut the brussel sprouts in half if they are large.  If they are really small just leave whole.  Test the oil by dropping a pinch of flour in the oil.  If the four starts to cook then your ready to go.  You have to have a lid for the skillet or pot you are frying in because of the water content in the brussel sprouts.  As soon as you drop the brussel sprouts in the fryer they will splatter everywhere and burn you if you are not careful.  So what you need to do is drop all the brussel sprouts in the frying pan and immediately put the lid on top of the pan/pot.  Keep the lid on for about 30 seconds until you hear most of the water fry out of the brussel sprouts.  You will be able to tell because the noise will die down.  When the violent frying has died down take the lid off and fry the brussel sprouts for roughly 5-7 minutes  until they are golden brown and tender.  Strain off and immediately place in a bowl.  Add 1/4 cup of the miso mayo and add a touch of salt if needed. (miso is very salty so you might not need to add any)   Place in a bowl, drizzle with a little extra miso mayo and sesame seeds and enjoy the easiest, tastiest brussels you have ever had!
